The Beez Neez of Banana Bread
I use this recipe all the time with one secret ingredient... Tamarillo when available (I replace half a banana with 3 or 4 Tamarillos which are prepared by scooping out the centres into a bowl including seeds etc mashing them up and add to the wet mixture below
2 cups self raising flour
3/4 tsp bicarb soda
1/3 cup brown sugar
1/4 tsp ground cinnamon
pinch salt
4 over ripe bananas( or 3 and half bananas + 4 Tamarilos)
2 eggs
1/3 cup Maple Syrup
70g melted butter
1/2 cup sour cream
Preheat Oven to 180 C or 160 if fan forced
Grease a loaf tin and line with baking paper
Sift all the dry ingredients into a large bowl.
Mash bananas into a medium bowl and add all wet ingredients mixing well.
Make a well in the sifted dry ingredients and add all of the wet mixture
Mix throughly and pour into loaf tin
Bake for 50 -60 minutes
Check that loaf is cooked by inserting a skewer into the middle and check that iy comes out dry
Remove from oven and stand for 10 minutes in the tin
Loosen up the loaf and turn out onto a rack
