PICANTE CHICKEN

6 chicken breast fillets

2 cups (350g) salsa

1/3 cup (70g) brown sugar

2 tbsp honey-Dijon mustard

Preheat the oven to 175C. Combine all the ingredients and place in a 30 x 20cm (12 x 8-inch) baking dish. Bake until the chicken is thoroughly cooked, 40 to 45 minutes.

Optional: Add strips of red capsicum (peppers) before baking for added colour and flavour.-Serves 6
