CAN I MAKE JAM, RATHER THAN JELLY, FROM APPLES?

Yes, but it's a bit dull unless you add extra flavouring such as ginger or spices. Peel and core 1kg of cooking apples. Tie peel and cores in muslin and put in a pan along with the sliced apples, rind and juice of 1 lemon and 1 & 1/2 cups of water. Cook until soft, then squeeze and discard muslin bag. Stir in 750g sugar, bring back to the boil and cook steadily until you get a good setting test. Pot as usual.

WHAT'S THE BEST WAY TO STORE PASSIONFRUIT?

Wrapped and refrigerated, unless you intend using them within a few days. The fruit is sweetest when skins are lightly wrinkled. To store for more than two weeks freeze whole or pulped - spoon pulp into ice cube trays, freeze then transfer to a plastic bag for easy freezer storage. Passionfruit fall from the vine when ready; if picked too early they won't ripen. Passionfruit are a good source of vitamins C and A and the seeds add fibre.
