DO YOU HAVE A RECIPE FOR FRITTERS MADE WITH FRESH CORN?

Place in a bowl one cup self-raising flour, half a teaspoon of salt, a little freshly ground black pepper and two finely-chopped spring onions. Cut the kernels from two corncobs; separate two eggs. Add the yolks to the bowl with the corn and mix to a fairly thick batter with about half a cup of milk. Beat the whites until stiff and fold through. Drop a spoonfuls of the mixture into shallow hot oil, cooking each side until golden.

IS THERE A WAY TO JUDGE THE QUALITY OF AN UNCUT WATERMELON?

Watermelons should be ripened on the vine and a good one sounds hollow when tapped with your finger. The skin should look shiny and unblemished, with a pale yellow underside. Since watermelons are 90 per cent water, the juiciest ones seem heavy for their size. They are not good keepers and need to be stored in a cool place and used within a week or two. Once cut, refrigerate and use as soon as possible.
