Could you suggest a meatloaf recipe for serving hot or cold?

Mix together 500g minced beef, 250g pork sausage meat, 1 teaspoon finely chopped onion, 1 peeled and grated carrot, 1 peeled and grated cooking apple, 1 egg, 1 tablespoon chopped fresh herbs, 1 teaspoon each of curry powder, soy sauce, tomato sauce and sweet chilli sauce, 1/2 teaspoon salt, 1/2 cup rolled oats and 1/4 cup sultanas.

Turn into a greased loaf tin and bake at 190C for an hour.

Stand 7 minutes before turning out.

 

Can I substitute oil for butter in biscuit recipes?

Sometimes. When substituting oil for butter in baking, a general rule is to use 1/4 cup oil instead of 50g butter, or one eighth less oil than butter.

Use a low-flavoured oil, adding a pinch of salt to make up for the salt in butter.
Biscuits made with oil tend to spread out more, so allow plenty of room on the baking tray.
