WE ARE SICK OF BANANA CAKE, SO CAN YOU SUGGEST ANOTHER WAY OF USING UP RIPE BANANAS?

Set the oven to moderate. Peel the bananas and cut into quarters (first lengthwise, then across). Place each piece on a thin slice of lightly buttered bread, crusts removed. Sprinkle with a little brown sugar and a pinch of cinnamon then roll up and secure with a toothpick. Arrange on a greased ovenproof dish, brush lightly with melted butter then bake for about 15 minutes or until golden and crisp. Serve immediately.

IS IT POSSIBLE TO MAKE LEMON CURD WITHOUT THE BOTHER OF STANDING IT OVER BOILING WATER?

Yes. If you are careful you can cook it over a very gentle direct heat, stirring constantly with a wooden spoon until it thickens sufficiently - never let the mixture actually boil or your lemon honey will curdle. You could also do it in the microwave, using medium/low power and stirring every minute or so. But using a double boiler or heatproof basin stood over simmering water remains the more reliable method.
