4 skinned and boned white fish fillets;
freshly ground salt and black pepper to taste;
1/2 tsp each: dried oregano, thyme;
4 thin slices onion;
1/4 cup each: chopped parsley, finely grated cheese;
1 tablespoon capers, rinsed and drained
Cut 4 squares of baking paper large enough to wrap a portion of fish. Place each fish portion in the centre of the squares. Sprinkle with the seasonings. Top with the onion, parsley, cheese and capers. Wrap in the baking paper. Place the 4 parcels on a platter in the microwave. Cook on high for 4-5 minutes or until cooked. Great served with mashed potatoes and steamed greens. -Serves 4.
