15 Minute Meals: Stir-fried salmon and veg (recipe)

1 teaspoon canola oil

300-400g salmon stir-fry

1 small red onion, sliced

1 tsp freshly grated root ginger

4 cups mixed veggies eg sliced peppers, sliced asparagus, button mushrooms, peas

3 tbsp orange juice

1 tbsp hoisin sauce

Heat the oil in a large, non-stick frying pan on medium.

Add the salmon. Stir-fry for 2 minutes, until the salmon is golden. Remove from the pan and set aside. Add the onion and ginger and cook for 1-2 minutes.

Add the remaining vegetables and stir-fry for 2-3 minutes. Return the salmon to the pan with the orange juice and hoisin sauce. Heat through. Great served with lemon wedges and rice. -Serves 4
